On Coffee Production
Out of many alternatives, the most common ways of brewing coffee are filtered coffees and espresso. The goal is to bring out all the delicious aromas and tastes that are hidden in the coffee, no matter how it‘s made. Brewing in water always dilutes the aromas and tastes of ground coffee. The final taste depends on the quality of the water and the ground coffee as well as how hot the water is and how it is brewed.How the coffee beans and ground coffee are stored also impacts the taste because coffee is very sensitive to heat and light. In addition, the coffee begins to deteriorate as soon as it comes in contact with oxygen. Coffee has to be enjoyed as quickly as possible after brewing as the best aromas and tastes will disappear within half an hour. After that, the coffee acquires a bitter taste. In a thermos flask the coffee is preserved a bit longer.
High quality coffee is usually made from washed Arabica beans. Robusta has a more rubbery flavor and contains twice as much caffeine as Arabica. Robusta is used in espresso (10-15%) to form crema and to provide taste and character.
Coffee cultivation requires a tropical climate and much labor. Brazil is the world’s biggest producer of coffee with a 29% share of the world market. After the coffee has been harvested and pretreated on the plantations it is transported to roasteries that roast, grind and mix the coffee.
